The juice or wine to be tested must be free of carbon dioxide (shake). First of all, the test cylinder is rinsed out once and then the juice or wine is filled up to the 0 mark on the acid measuring cylinder (titration cylinder). The blue lye is then added drop by drop and mixed by tilting the cylinder closed with the thumb. The lye neutralizes the acid. When the neutral value is reached, the color changes to dark green and then blue. For dark green, read the acid content in grams per liter (per mille) at eye level at the intersection. Graduations from 0 to 15 grams.
