This means that no bacteria can penetrate from the outside; the carbon dioxide produced during fermentation, on the other hand, can escape as a result of the overpressure.
The water in the fermentation bung evaporates over time. Regular control of the water level and refilling is necessary. The airlock can also be filled with a disinfectant solution instead of ordinary water
